(Gluten Free  Fruit Cake)   350degrees

  • Overnight if you like you can soak your 1/2 c each  raisins,mincemeat and fruit peel in a bowl with 1/4c brandy or.lemon juice. 1 tsp vanilla and almond extract
  • 1/2 pd room temperature unsalted butter BEAT together with 1 c raw sugar and 6 eggs
  • In another bowl 2 c Bob’s Red Mill baking mix , 1 tsp each of  nutmeg , cinnamon and allspice
  • MIX by hand  flour mix with your butter mix and FOLD in fruit mix.

Fill your GREASED  pans 3/4 full top with glazed cherries and put a pan of water on the bottom of the oven rack to keep cake moist
Bake for approx. 40-45 mins or until done when toothpick comes out clean! LET COOL and wrap soaked cheesecloth freeze or put in a cool dry place… brush the tops often! Happy Holidays!!
